As a child I did not eat any pasta. It was not a part of the Indian cuisine. My mother was a wonderful cook, but did not stray far from the traditional Indian fare. I was introduced to pasta by my husband's family. My mother-in-law, also an excellent cook, explored western food and adapted it with Indian spices.
I soon came to enjoy macaroni and cheese, Penne pasta, Fettuccine Alfredo and a host of other pasta dishes. I learned to cook pasta dishes in a variety of ways. It is so versatile.
One can make interesting casseroles, spice it, add sauces, add vegetables and you have a unique pasta dish. Pasta can be made into salads, stir fry's, and children even play with the colorful pasta, count and thread them.
Pasta is now a staple in my home. Over the years I have devised a number of interesting pasta recipes. Several of the recipes on this site have been contributed by family and friends.
