Delicious Spaghetti with Pesto Sauce


Spaghetti with Pesto Sauce - Vegan

This is a very delicious meal that can be be made in half hour. You can either make your own pesto sauce or buy it. I used store bought pesto in this recipes. Served with a green salad, spaghetti sauce and either garlic bread or any bread of your choice you will have a delicious dinner in a short time.

You may use store bought spaghetti sauce or make your own. Here is a link for my Spaghetti Sauce Recipe. This time I had left over pieces of vegetables like half a zuchinni and bell peppers, so I added that when sautéing the sauce. You can choose to add any vegetables that you prefer or just make it plain.

When boiling noodles add a few drops of oil to the boiling water. The oil prevents noodles sticking to each other.

Macaroni & Cheese

Ingredients

  • 6 oz. spaghetti
  • 2-3 tblsp. ground almonds
  • 4 tblsp, pine nuts
  • 4 tblsp. pesto sauce
  • 2 tsps. crushed garlic
  • 4 tblsp. Olive oil, divided
  • 1-2 teaspoons salt

Method

  • Break Spaghetti into small pieces then add to boiling water.
  • Add salt and a few drops of oil to prevent sticking
  • When pasta is still al denté, drain in a colander
  • Transfer pasta to a dish and mix with 2 tblsps. Olive oil
  • Add 2 tblsps. olive oil in a pot. When heated add crushed garlic and 4 full tablespoons of pesto sauce
  • Mix well, then add spaghetti. Stir and add pine nuts and almond flour
  • Taste for salt and add more if desired
  • Serve with spaghetti sauce, salad and bread of your choice
  • You may add ground pepper & chili pepper flakes
