Spaghetti with Marinara Sauce and Tater Tots

This very quick and easy dish was so delicious that I enjoyed eating the spaghetti without any accompaniments. But, I did serve it with Marinara sauce and some Tater Tots, because that is the way my husband likes it.

If you are wanting to cook something very quick, then do try this recipe. You can use store bought Marinara Sauce, or make your own. Here is a link for my recipe for Spaghetti Sauce

The Tater Tots is store bought. It is pieces of shredded potatoes that are cubed. They can just be baked in the oven. If you do not have this product where you live, then substitute any side dish or just skip it. A green salad with some garlic bread makes a great accompaniment. If you are rushed for time, serve sliced oranges or pineapple on the side, instead of a salad.

INGREDIENTS

  1. 8oz. spaghetti noodles
  2. 2 tblsp. olive oil
  3. ½ cup onion, sliced
  4. 1 tsp. chopped garlic
  5. 2 tblsps. pine nuts
  6. ½ cup chopped basil
  7. ½ tsp. crushed ginger
  8. 1 tsp. salt

METHOD

  1. Boil spaghetti until it is soft, but not mushy. Add a few drops of oil to the boiling water
  2. Add salt to taste, then drain and keep aside
  3. Wash onions and make slices, about a ¼" thick. You should be able to bite into the onions
  4. Rince basil leaves and tear into small pieces
  5. Wash and crush ginger
  6. Heat oil, stir fry onions and garlic for about 3 minutes
  7. Add Pine Nuts and stir fry, watching to ensure it does not burn follow with crushed garlic
  8. Add Spaghetti and mix well. Add part of the Basil and blend
  9. Add salt and adjust if necessary. Switch off heat
  10. Garnish with chopped remainder of Basil leaves
  11. Follow instructions on preparing Tater Tots
  12. Serve with portions of sauce and Tater Tots
  13. A salad makes a welcome addition
