I have separated the different steps involved in making Cannelloni just so it would not be one tedious, long page. In separating the steps I was able to add pictures that may help you in compiling this really delicious meal. This is the final step when we put together all the different components to make Cannelloni.

Please note that if you want a shorter version, do use the pasta tubes called, either cannelloni or mannicotti. You may also use the store bought Ricotta cheese. Please note: the amounts in this recipe will serve at least 6 adults. Please adjust the quantities for your needs.

On this page you will find the recipe for cooking the spinach and preparing cannelloni filling. I have used spinach and Ricotta cheese. You may choose to use any filling that your prefer.

Here is the recipe for how to cook the Spinach and prepare the filling

Spinach-Ricotta for Cannelloni

Ingredients

  1. 1½ pounds frozen spinach
  2. ½ cup chopped onion
  3. 1 tsp. salt
  4. 3 tsp. crushed garlic
  5. 3 tblsps. Olive oil

Ingredients for Filling

  1. 3 cups of ricotta cheese
  2. ¼ cup finely chopped onion
  3. 1 full teaspoon crushed garlic
  4. ½tsp. nutmeg
  5. 1 tsp. ground black pepper
  6. ½ cup cheddar

Method

  1. Thaw spinach. Use a colander to drain water from thawed spinach
  2. Heat oil. Sauté onion, & garlic for a few seconds
  3. Add spinach, cook on high temperature for 3-5 minutes
  4. Stir contents occasionally to prevent burning. Lower temperature
  5. Add salt
  6. It is done when there is no liquid left in the pot.
  7. When cool add ricotta cheese to spinach. Mix well & test for salt. Adjust to your taste.
  8. Add, chopped onion, garlic & nutmeg. Mix well. Keep aside

Filling the Pancakes

  1. In a large baking tray, (mine measured 15x14 inches, approx. 40cm.x 35cm.) spread 1½ cups of Marina Sauce
  2. Place pancake on a plate. Fill each with about 2 heaped tablespoon of spinach-ricotta mix. Roll to close pancakes
  3. Split rolled pancakes in center and lay on baking tray. Continue until the tray is full
  4. Now add another 1-1½ cups marinara sauce to cover the pancakes
  5. Next layer with White Cheese Sauce over the marinara sauce
  6. Sprinkle the top with cheddar cheese
  7. Bake at 400°F. for approximately 20-25min until cheese browns at the top
  8. Slice and serve while still warm. A green salad makes a nice accompaniment to this rich dish
