Pancakes ready to be filled with Spinach-Ricotta Cheese Mix
Cannelloni, an Italian dish of stuffed pasta shells with a sauce is also known as Manicotti. Several of my family and friends enjoy this dish. I always made it with pasta, the little tubes about 4" long, (see image below). I recently found a recipe that used pancakes instead of the pasta tubes.
I did know that originally, in Italy, cannelloni was made with Crepes. I decided to try this dish with pancakes, (my version of crepes),instead of the pasta tubes, with my own home made Ricotta cheese. I am very pleased with the results. You will find the recipe for the pancakes in this page. Please note: the amounts in this recipe will serve at least 6 adults. Please adjust the quantities for your needs. Although the cannelloni with pancakes is time consuming, it is worth the effort if you want to make a special dinner. However if you are limited for time, skip
the pancakes making & and just use the pasta tubes as illustrated in the image above. You may also just purchase Ricotta Cheese from the store.
All you need to do is boil the pasta and remove while still firm to the touch. When cool, fill it with a mix of ricotta and spinach and follow the rest of the recipe for cannelloni.
